Chocolate cookies

Some of you asked me to share the recipe for some biscuits I made for the Reiki Empowerment today.

The recipe is actually adapted from Lucinda Miller’s The Good Stuff.

Ingredients

135g oats

40g raw cacao powder

80g coconut sugar

40ml maple syrup

105g melted dairy free butter or coconut oil

Method

  • Preheat oven to 180 degrees Celsius and line a baking tray with parchment paper

  • Blitz oats in a food processor until you have a flour-like consistency

  • Tip the mixture into a large bowl and add the cacao powder and coconut sugar followed by the maple syrup and melted butter/coconut oil.

  • Mix the ingredients well and form into a ball. If it is too dry you may need to add more melted butter. If it is too wet you may need to add more oats. I kind of do it intuitively so don’t pay too much attention to measurements.

  • If the mixture is too wet leave in the fridge for 10-15 minutes. Either way, scoop some of the mixture into your hand and squish into a biscuit shape and pop on the baking tray. You can use a fork to flatten the biscuits and create little ridges.

  • Bake in the oven for approximately 11-12 minutes. Try and remove before they brown.

  • Leave them to cool before popping in an airtight container - or share them around!
