Ayurvedic chai

I love, love, love Chai. One of my most favourite things in the world back in the day was going to the Byronshire Sunday market and sitting at the chai tent, listening to the drumming and drinking the home made chai. Heaven.

Now I have to make my own and I really like this particular recipe, and happily, it is pitta friendly.

Ingredients

1.5-2 cups of water

6 black peppercorn gently crushed

4 cardamon pods, gently crushed

3 cloves, gently crushed

1 teaspoon freshly grated ginger

2 cinnamon sticks

1/2-1 cup of unsweetened almond milk

1 teaspoon of loose-leaf organic black tea or 1 organic teabag

Raw honey to taste

Method

  1. Place the water and all the herbs in a pan and bring to the boil and then simmer for 5-10 minutes (obviously the longer you leave it, the stronger it is to taste)

  2. Then add the almond milk and simmer for another 1-2 minutes, stirring really well.

  3. Turn off the heat and add the tea (if using) and allow to steep for a few minutes depending on how strong you like it.

  4. Strain the chai into a mug and add some immune boosting raw honey - perhaps a teaspoon.

  5. Sit down and enjoy!
